Recipe of Besan Ki Barfi

Recipe of Besan ki Barfi, a delicious Indian sweet made with gram flour (besan)



Ingredients:

- 1 cup gram flour (besan)

- 1/2 cup ghee (clarified butter)

- 1 cup sugar

- 1/2 cup water

- 1/2 teaspoon cardamom powder

- 1 tablespoon chopped nuts (such as almonds, pistachios, or cashews) for garnishing


Instructions:


1. Heat a heavy-bottomed pan or a non-stick pan over medium heat. Add ghee and let it melt.


2. Add the gram flour (besan) to the pan and roast it in ghee on low heat. Stir continuously to avoid burning and ensure even browning. Roast until the besan turns golden brown and a nutty aroma is released. This may take around 10-15 minutes. Be patient and keep stirring to prevent any lumps.


3. While the besan is roasting, prepare the sugar syrup. In a separate pan, add sugar and water. Stir over medium heat until the sugar dissolves completely. Bring the sugar syrup to a boil and let it cook for a few minutes until it reaches a slightly sticky consistency. You can test the consistency by taking a small amount of syrup between your fingers and checking if it forms a thread.


4. Once the besan is roasted to a golden brown color, reduce the heat to low and slowly pour the hot sugar syrup into the roasted besan. Be careful, as the mixture may splutter.


5. Mix well to combine the besan and sugar syrup until the mixture thickens and starts leaving the sides of the pan. This may take around 5-7 minutes.


6. Add cardamom powder to the mixture and mix well to incorporate the flavors.


7. Grease a square or rectangular tray with ghee and transfer the mixture into it. Spread it evenly and press gently to make it compact.


8. Garnish with chopped nuts, pressing them lightly into the surface of the barfi.


9. Allow the mixture to cool completely and set for a few hours or refrigerate for quicker setting.


10. Once the barfi is set, cut it into square or diamond-shaped pieces.


11. Serve the delicious Besan ki Barfi as a sweet treat or offer it during festivals and special occasions.
