Recipe of Kaju Katli

 Recipe for Kaju Katli, a popular Indian sweet made with cashews:


Ingredients:

- 1 cup cashews (kaju), unsalted

- 1/2 cup sugar

- 1/4 cup water

- 1/4 teaspoon cardamom powder

- 1 tablespoon ghee (clarified butter)

- Edible silver leaf (optional) for garnish

- Pistachios, finely chopped for garnish


Instructions:


1. Grind the cashews in a food processor or blender until they turn into a fine powder. Make sure not to overblend, as the cashews may release oils.


2. In a non-stick pan, heat ghee over medium heat. Add the cashew powder and roast it for about 2-3 minutes, stirring continuously to prevent burning. This step enhances the flavor of the cashews.


3. In a separate saucepan, combine sugar and water. Cook over medium heat, stirring occasionally, until the sugar dissolves and the syrup comes to a boil. Continue boiling for another 2-3 minutes to achieve a slightly sticky consistency.


4. Reduce the heat to low and add the roasted cashew powder to the sugar syrup. Mix well to combine and break any lumps that may form.


5. Stir the mixture continuously on low heat until it thickens and starts to leave the sides of the pan. This process may take around 5-7 minutes.


6. Add cardamom powder to the mixture and mix well.


7. Transfer the mixture onto a greased plate or a flat surface lined with parchment paper. Allow it to cool slightly until it is safe to handle.


8. Grease your hands with ghee and knead the mixture gently to form a smooth dough-like consistency.


9. Place the dough between two sheets of parchment paper and roll it out evenly into a thin layer using a rolling pin. The thickness can be adjusted as per your preference.


10. While the rolled dough is still warm, cut it into diamond or square-shaped pieces using a knife or a cookie cutter.


11. Allow the Kaju Katli to cool completely before removing the pieces from the parchment paper.


12. Garnish each piece with a small piece of edible silver leaf (optional) and sprinkle chopped pistachios over the top.


13. Your homemade Kaju Katli is ready to be enjoyed. Store it in an airtight container for up to a week.
