Paneer Lababdar Recipe

 Paneer Lababdar, a popular Indian dish made with paneer (Indian cottage cheese) in a rich and flavourful tomato-based gravy:


Ingredients:

- 200 grams paneer, cut into cubes

- 2 tablespoons ghee (clarified butter) or oil

- 1 large onion, finely chopped

- 1 teaspoon ginger-garlic paste

- 2 large tomatoes, pureed

- 1/4 cup cashew nuts, soaked in warm water for 15 minutes

- 1/4 cup fresh cream

- 1 teaspoon red chili powder

- 1/2 teaspoon turmeric powder

- 1 teaspoon coriander powder

- 1/2 teaspoon cumin powder

- 1/2 teaspoon garam masala

- 1/2 teaspoon kasuri methi (dried fenugreek leaves)

- Salt to taste

- Fresh coriander leaves for garnishing


Instructions:


1. Heat ghee or oil in a pan over medium heat. Add the chopped onions and sauté until they turn golden brown.


2. Add the ginger-garlic paste to the pan and sauté for a minute until the raw aroma disappears.


3. In a blender, puree the soaked cashew nuts with a little water to form a smooth paste.


4. Add the tomato puree to the pan and cook for a few minutes until the rawness of the tomatoes goes away.


5. Add the cashew paste to the pan and mix well. Cook for a couple of minutes, allowing the flavors to blend together.


6. Add red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Mix well and cook for a few more minutes.


7. Add fresh cream to the pan and stir it into the gravy.


8. Add paneer cubes to the gravy and gently mix to coat them with the sauce. Be careful not to break the paneer cubes.


9. Sprinkle garam masala and kasuri methi over the paneer lababdar. Mix gently.


10. Reduce the heat to low, cover the pan with a lid, and let the paneer simmer in the gravy for about 5-7 minutes, allowing it to absorb the flavors.


11. Remove the lid and garnish with fresh coriander leaves.


12. Serve the delicious Paneer Lababdar hot with naan, roti, or rice.
