Recipe for Chaat

Recipe for Chaat, a popular Indian street food, in steps:

Ingredients:

For Chaat:

- 2 cups boiled and cubed potatoes

- 1 cup boiled chickpeas

- 1 cup chopped onions

- 1 cup chopped tomatoes

- 1/2 cup chopped cucumber

- 1/4 cup chopped coriander leaves

- Tamarind chutney (store-bought or homemade)

- Mint-coriander chutney (store-bought or homemade)

- Sev (crispy chickpea flour noodles)

- Chaat masala (a spice blend available in stores)

- Red chili powder (optional)

- Salt to taste

- Lemon wedges for garnishing


For Mint-Coriander Chutney:

- 1 cup fresh mint leaves

- 1 cup fresh coriander leaves

- 2 green chilies

- 1-inch piece of ginger

- 1 tablespoon lemon juice

- Salt to taste

- Water (as needed)


For Tamarind Chutney:

- 1/2 cup tamarind pulp

- 1/4 cup jaggery or sugar

- 1 teaspoon roasted cumin powder

- 1/2 teaspoon red chili powder

- Salt to taste

- Water (as needed)


Instructions:


For Mint-Coriander Chutney:

1. Blend mint leaves, coriander leaves, green chilies, ginger, lemon juice, and salt in a blender or food processor.

2. Add water gradually while blending until a smooth chutney consistency is achieved. Adjust salt and lemon juice according to taste. Set aside.


For Tamarind Chutney:

1. In a saucepan, heat tamarind pulp and jaggery/sugar over medium heat.

2. Stir and cook until the jaggery/sugar melts and the mixture thickens slightly.

3. Add roasted cumin powder, red chili powder, and salt. Mix well.

4. Add water gradually to achieve the desired consistency. Cook for a few more minutes.

5. Remove from heat and let it cool. The chutney will thicken further as it cools. Set aside.


For Chaat Assembly:

1. In a large mixing bowl, combine boiled and cubed potatoes, boiled chickpeas, chopped onions, chopped tomatoes, chopped cucumber, and chopped coriander leaves.

2. Add a sprinkle of chaat masala, red chili powder (if desired), and salt. Mix everything well to combine the flavors.

3. Take serving plates or bowls and divide the chaat mixture equally among them.

4. Drizzle tamarind chutney and mint-coriander chutney over the chaat according to taste preference.

5. Top it off with a generous amount of sev (chickpea flour noodles).

6. Garnish with a squeeze of lemon juice and additional chopped coriander leaves if desired.

7. Serve the delicious homemade Chaat immediately and enjoy!


You can customise the chaat by adding other ingredients like puffed rice, crispy puris, yogurt, or any other toppings of your choice.
