Ingredients:

- 2 cups cooked rice (preferably leftover rice)

- 1 cup mixed vegetables (carrots, bell peppers, beans, cabbage, etc.), finely chopped

- 1 onion, finely chopped

- 2 cloves of garlic, minced

- 1-inch piece of ginger, grated

- 2 green chilies, finely chopped (adjust to taste)

- 2 tablespoons soy sauce

- 1 tablespoon tomato ketchup

- 1 tablespoon vinegar

- 1 teaspoon chili sauce (optional, for extra heat)

- 2 tablespoons oil

- Salt to taste

- Fresh coriander leaves for garnishing


Instructions:


1. Heat oil in a large pan or wok over medium-high heat.


2. Add minced garlic, grated ginger, and chopped green chilies to the hot oil. Sauté for a minute until the raw aroma disappears.


3. Add chopped onions and sauté until they turn translucent.


4. Add the finely chopped mixed vegetables to the pan and stir-fry for a few minutes until they are slightly tender but still crisp.


5. In a small bowl, mix soy sauce, tomato ketchup, vinegar, and chili sauce (if using). Set the sauce mixture aside.


6. Push the vegetables to one side of the pan and add the cooked rice to the other side. Break up any lumps in the rice using a spatula.
